How to bake with Coconut Flour
This is a very informative article about coconut flour. I have often wondered if some of my recipes are right because the batter seems so stiff and dry and I wind up adding a lot of water to make it pourable or spreadable. Water that the recipe does not even call for, did they forget to add water to the ingredient list? This gal explains that not only does coconut flour not act the same as all purpose flour but NOT ALL coconut flours act the same! Wow really? Did I mention that gluten free, grain free, Paleo baking can be a very trial and error thing (unless someone you trust has already done the work for you and you have basically the same taste and they give you an exact brand ingredient list...)
The basic guide is 1/4 cup coconut flour for each 1 cup of all purpose flour and 1 egg for each ounce of coconut flour.There are 2 ounces in each 1/4 cup of coconut flour so a recipe that calls for 1 cup of all purpose flour would use 1/4 cup coconut flour and 2 eggs (you need to let the batter rest 5 minutes to let the coconut flour absorb the liquid - after that you may need to add some more liquid- water, etc. )

Corn Free Corn Dogs

1 C chickpea flour
1/2 tsp. guar gum
Pinch salt
1 1/2 tsp baking powder
2 T sugar
1 egg
1 T oil
Milk
Mix dry ingredients, whisk in egg, oil & enough milk to make a nice pourable batter. I cut my hot dogs in half and put both halves in the little loaf pans. Grease the pans with a safe for you fat. Pour batter over dogs and bake at 400 degrees for 20 minutes.

DIY Instant Oatmeal packets

Heartweed: I would omit the milk (it is not an ingredient in the organic instant oatmeal we buy prepackaged, and I would also use coconut sugar instead of brown sugar or add 100% pure maple syrup to sweeten after cooked)
Ingredients
- 10 cups quick oats
- 1 teaspoon salt
- 1-1½ cups brown sugar (depending on how sweet you want it)
- 1 cup powdered milk
- 2 teaspoons cinnamon
- 21-24 snack-size zip bags
Instructions
- Put 6 cups of the oats into a large bowl.
- Place the remaining 4 cups of oats into a blender. Blend until almost powdery, then pour into the large bowl.
- Add the salt, brown sugar, powdered milk, and cinnamon into the large bowl.
- Mix well until everything is combined.
- Measure ½ cup of the oatmeal mixture into each snack-size plastic baggie and seal.
To use DIY Instant Oatmeal Packets:
- Pour the packet into a bowl, and add the desired hot water. Stir and serve.
Notes
Because the plastic bag doesn't get wet or dirty, you can reuse it.
You can also add dried fruit, nuts, coconut.
