Meaty Country Gravy :Dairy Free

This is my throw together quick gravy. We do not eat pork so I use grass fed ground beef. I will be experimenting soon with different types of "stuffed sausages". Did ya know that there are seafood sausages that are made by stuffing fish, crab and such in casings? I did not but .....

Okay ...Ingredients:

1 lb of ground beef (or you can use sausage) brown well in cast iron skillet (that is the country part)
1 can of FULL fat coconut milk (full fat is the only kind around here!)

Directions: After you have browned the meat, pour in the coconut milk. Salt to taste.
Bring to boil , reduce heat and stir until as thick as you like.
You can add some spices like black pepper, sage (gives it that sausage taste)

Fajita Grits (Corn Free)

Servings: main meal for 2 adults and a 4yr old ;)


1/2 cup Cream of buckwheat (taste just like our Southern corn grits!)
1 lb grass fed beef- ground or steak cut in strips
1 cup or more of bell pepper cut in strips or diced
1 small onion strips or diced
olive, coconut, macadamia or oil of your choice


Cook buckwheat according to package: I used Pocono Organic Cream of Buckwheat- for 2 servings bring 2 1/2 cups of water to boil add 1/2 tsp salt , stir in 1/2 cup of buckwheat , return to a boil and simmer for 10 minutes stirring frequently.

I like to use cast  iron skillet for the meat and veggies. Coat the bottom with a little oil and add onions. Cook until tender (I like mine caramelized/slightly browned) Add the peppers and beef and cook until the beef is cooked through.

Spoon the cooked buckwheat in a bowl , top with the beef and veggies. You can also add salsa. You can also cook the veggies separate from the beef and layer: buckwheat, beef, veggies for a pretty bowl.

Valentines Milk Shake

1 can of full fat organic coconut milk (Native Forest)
6 or so organic frozen strawberries
sweetener of choice - maple, beet sugar, honey (adjust to your taste -maybe about a tablespoon) optional

Blend and add water to thin.

My Go to quick Paleo One dish dish

I like to just take a glass casserole dish -8x8 for 2 people and a large one for 4 or more people. And layer veggies and meat sprinkle with oil and bake.

Lunch today for 2 people.
half bag of frozen organic broccoil.
half bag of frozen organic spinach
1 sweet onion (chopped)
1 med sweet potato (chopped with peel or without) ( you can dice or slice in half circles)
1/2 lb grass fed ground beef
 oil (coconut or olive oil)
Redmond sea salt

layer in the vegetables in bottom of dish, in order above, just sprinkle on the raw beef and drizzle with oil. Sprinkle salt to taste and bake 350 for 25 minutes. Done! So easy.

Add any vegetables and any kind of meat. so many variations.
