Lasagna Stuffed Peppers

Lasagna Stuffed Peppers - Low Carb, Gluten Free | Peace Love and Low Carb

  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large yellow bell pepper
  • 1 large orange bell pepper
  • 2 ½ cups Tomato Meat Sauce (see recipe below) 
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 1 tbsp Italian seasoning (Hw:  diy italian seasoning recipe under labe "make it don't buy it" )

  1. Preheat oven to 400° Line a baking sheet with aluminum foil.
  2. Slice bell peppers in half lengthwise and remove ribs and seeds. Place pepper halves on baking sheet and bake for 20 minutes on the middle rack.
  3. Remove peppers from oven. Fill each pepper with ¼ cup tomato meat sauce.
  4. Next, spoon 2 tbsp of ricotta cheese on top of the meat sauce in each pepper cup. Pour an additional 1 tbsp meat sauce on top of the ricotta cheese.
  5. Top each pepper with 2 tbsp mozzarella cheese. Bake on middle rack for 12 minutes.
  6. Remove peppers from oven. Top each pepper with 1 tbsp Parmesan cheese and a sprinkle of Italian seasoning. Bake 5 additional minutes . Remove and enjoy!

Pizza muffins

Other people have successfully substituted the almond flour for sunflower seed flour (1:1) in their paleo bread recipes. I have not tried it with this recipe, but could be an option. Put in a bit of lemon juice to avoid getting green muffins due to the reaction between sun flower seeds and baking soda

Serves: 12
Ingredients
Instructions
  1. In a food processor, combine almond flour, salt, and baking soda
  2. Pulse in eggs and sauce until combined
  3. Pulse in cheeses and pepperoni
  4. Line 12 muffin cups with paper liners
  5. Scoop a heaping 1/4 cup of batter into each cup
  6. Bake at 350° for 25 minutes
  7. Remove from oven; place 1 teaspoon sauce on top of each muffin
  8. Sprinkle cheese over sauce
  9. Sprinkle pepperoni over cheese
  10. Place back in oven and bake for 15 more minutes
  11. Cool for 1 hour
  12. Serve

I (Elana) based this recipe on one from Pamela Salzman, a private chef in Southern California. I haven’t tried it, but I’ll bet this grain-free Pizza Muffin recipe would be incredible with various vegetable fillings and toppings such as mushrooms, spinach, or zucchini. If you experiment, please let us know what changes you make to the recipe and if you have to adapt any of the other ingredients. When you include vegetables it may be best to saute them first, otherwise they will be very wet.

Crock Pot Chicken Tortilla Soup Recipe {Paleo, Whole30, Gluten-Free, Clean Eating, Dairy-Free}



Ingredients
  • 4 large Chicken Thighs, bone-in
  • 1, 28 oz. can Crushed Tomatoes
  • 1 1/2 t. Cumin
  • 1/2 t. Chili Powder
  • 4 oz. Diced Green Chilies
  • 1/2 C. Water
  • 1, 15 oz. Can Black Beans (omit for Paleo)
  • 1 Yellow Onion, chopped
  • 1 Red Bell Pepper, chopped or sliced
  • 2 small Zucchinis, cut in half lengthwise and sliced into half moons.
  • 1 T. Olive Oil
  • 1 1/2 t. Coarse Real Salt
  • 4 C. Chicken Broth
  • 2 T. Chopped Cilantro
  • TO GARNISH:
  • Sour Cream (omit for Paleo)
  • Chopped Cilantro
  • Salsa
  • Corn Tortilla Chips (omit for Paleo)
  • Diced Avocado
  • Lime Slices
Instructions
  1. Placed the chicken thighs, crushed tomatoes, cumin, chili powder, diced green chilies, and water in a slow cooker, cover, and cook on high for 4 hours or low for 8 hours.
  2. Remove chicken and let cool in a bowl for 1/2 hour. Remove the bones and cartilage from the chicken, lightly shred, and add back to the slow cooker along with the black beans, salt, and chicken broth.
  3. Preheat the oven to 425 degrees.
  4. Toss the onion, bell pepper, and zucchini with the olive oil, spread out on a foil lined baking sheet and bake on the top rack of preheated oven for 35-40 minutes, or until vegetables have developed a little brown color. Add vegetables to the slow cooker and let cook for 30 minutes more.
  5. Just before serving, add the chopped cilantro and check seasonings. Add more salt and pepper if desired.

6-Ingredient Mediterranean Salad

Ingredients
  • 2 avocados, peeled and sliced
  • 12 cherry tomatoes, halved
  • 2 medium cucumbers, diced
  • 1 large tomato, sliced
  • 1/4 cup Extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
Directions
In a serving bowl, combine all vegetables. In a small bowl whisk together the extra-virgin olive oil and lemon juice, drizzle over salad ingredients and gently toss to combine. Season with salt and pepper to taste.

Catsup from the Paleo Kid 

5 oz organic baby food prunes
5 oz tomato paste (hw: I used bionature organic /citric acid free)
1 1/2 t lemon juice
1 1/2 t raw honey, softened
1/4 t ground mustard
1/4 tsp salt (hw: I use pink Himalayan salt)

Whisk it together, enjoy!
Store in air tight container for up to 2 weeks in fridge.

  • 1 Tbsp lard  (hw: coconut oil) 
  • 1 large sweet potato, diced
  • 1/2 onion, diced
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 2 Tbsp tomato paste
  • 1 14 oz can diced tomato
  • 3 uncured hot dogs, sliced water as needed

DIRECTIONS

  1. In a large saucepan, melt lard over medium-high heat
  2. Add onions and sweet potato and sauté for 5 minutes*
  3. Add spices and stir for 1 minute*
  4. Add tomato paste and stir for three minutes*
  5. Pour in tomatoes (with juices) and reduce heat to medium low*
  6. Simmer for 20 minutes until “bean” sauce thickens and sweet potatoes are tender
    If your sauce gets too thick before the sweet potatoes are cooked through, add 1/4 cup of water at a time until you achieve your desired consistency
  7. Add hot dog slices and heat through for 3-5 minutes*
  8. Serves 3-4 kids. Remember, where there’s a *, there’s a step kids will love to help with!

Lexi's Clean Kitchen Salsa

  1. 4 organic Roma tomatoes (hw: option if fresh tomatoes not available: see below) 
  2. -1/2 onion
  3. -2 garlic cloves
  4. -1 jalapeño
  5. 1/3 cup fresh cilantro
  6. -1 lime, juiced
  7. -1/4 tsp Himalayan sea salt
  8. -1/4 tsp freshly ground pepper
  9. -1/4 cup water
  10. -1/2 tsp extra-virgin olive oil
  11. -Optional: 1/8 tsp red pepper flakes
  12. -Optional: To make it extra spicy, add 1 habanero pepper
Instructions
  1. 1. Slice tomatoes in half
  2. 2. In a large skillet, heat 1/4 cup water and add in tomatoes
  3. 3. Let cook for 3 minutes, flip over, and cook another 3 minutes (until skin starts to peel)
  4. 4. Remove from skillet and peel any skin that's removable, then place into food processor
  5. 5. In a pan, heat oil and add in onion and garlic
  6. 6. Let lightly sauté for 5 minutes and transfer to food processor
  7. 7. Add the rest of the ingredients (cilantro, salt, pepper, red pepper flakes, lime juice, jalapeño) to food processor and pulse lightly
  8. 8. Transfer to air tight container and store in fridge
Another great option (If you don't have fresh tomatoes) sub with
  1. -1 15oz. can organic whole peeled tomatoes
  2. -1 15oz. can organic diced tomatoes with chiles
  3. *Yields: 2 Cups

No Bean Turkey and Sweet Potato Chilihttp://www.skinnytaste.com/

  • 20 oz 93% lean ground turkey (grass fed beef) 
  • kosher salt, to taste
  • 1/2 cup onion, chopped
  • 3 cloves garlic, crushed
  • 10 oz can Rotel mild tomatoes with green chilies or 25oz. jar of crushed organic tomatoes
  • 8 oz can tomato sauce (no tomato sauce use 1/2 tomato paste to 1/2 water)
  • 3/4 cup water
  • 1/2 tsp cumin, or to taste
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
  • 1 bay leaf
  • 1 medium sweet potato, peeled and diced into 1/2-inch cubes


Directions:

In a large skillet, brown turkey over medium-high heat, breaking it up as it cooks into smaller pieces and season with salt and cumin.When meat is browned and cooked through add onion and garlic; cook 3 minutes over medium heat. Add the can of Rotel tomatoes, sweet potato, tomato sauce, water, cumin, chili powder, paprika, salt and bay leaf.

Cover and simmer over medium-low heat until potatoes are soft and cooked through, about 25 minutes stirring occasionally. Add 1/4 cup more water if needed. Remove bay leaf and serve.
