Elana's Watermelon Aguas Frescas


2 cups watermelon, sliced into 1 inch cubes, discard rinds
¼ lime juice, fresh squeezed
10 drops stevia
ice (lots)

  1. Place watermelon, lime juice and stevia in a Vita-Mix (or other high speed blender) and puree on highest setting until liquefied
  2. Fill 2 large glasses to the top with ice
  3. Pour watermelon mixture over ice
  4. Serve

Bob's Vanilla Pudding


Vanilla Pudding

Ingredients
Directions
Dissolve the arrowroot in 1/4 cup of the milk and set aside. Combine the remaining milk, syrup and salt in a sauce pan. Bring to boil over medium heat, stirring constantly. Add the arrowroot mixture and stir until mixture thickens. Remove from heat. Stir in vanilla and nutmeg. Pour ino serving dishes and refrigerate unti cold.

Graham Crackers

3 cups light bean flour mix ***bean flour mix is 1 cup bean flour
1 cup tapioca starch and 1 cup arrowroot starch or potato starch

1 teaspoon xanthum gum or guar gum
1 1/2 teaspoons salt
1 teaspoon cinnamon
2 1/2 teaspoons baking powder
3/4 cup butter
1/4 cup honey
1 cup brown sugar
1 teaspoon vanilla
1/8 cup water

In a medium bowl, mix together the flour, gum, salt, cinnamon and baking powder. Set aside.

2. In a large mixing bowl, beat together the butter, honey, brown sugar and vanilla.

3. Add the dry ingredients alternately with the water to large bowl. Add just enough water to moisten the ingredients where the batter will form a firm ball that is not sticky. You may have to add additional water. Refrigerate for one hour.

4. Preheat the oven 350.

5. Working with half the dough at a time.Roll out onto floured waxed paper.

6. Roll into rectangle shape 1/2 " thick.

7. Flip the rolled rectangle onto a lightly greased cookie sheet and continue rolling out until 1/8 thick. Cut with a pastry roll into 3"inch squares. Prick each square with fork 5 times.

8. Bake 30 minutes. Till golden brown.

9. Repeat with other half of the dough.

Gluten Free Nanaimo Bars

This looked like a yummy gooey sweet TREAT! I have a recipe for graham crackers and a GF vanilla pudding on the blog as well as a coconut vanilla pudding which I would think would be a good substitute for store bought pudding. Heartweed~

Gluten Free Nanaimo Bars

For Nanaimo Bars — Bottom Layer
1/4 cup Unsalted Butter
1/4 cup Granulated Sugar
5 tablespoons Unsweetened Cocoa
1 Large Egg, Beaten
1 1/4 cups Gluten Free Graham Wafer Crumbs
1/2 cup Almonds (Any type, Finely chopped)
1 cup Coconut (Shredded, sweetened or unsweetened)

For Nanaimo Bars — Middle Layer 1oz box sugar free vanilla pudding mix (please don't use sugar free-this is treat just use regular gluten free vanilla pudding)
and 1 cup skim milk

For Nanaimo Bars — Top Layer
1/2 cup Semi-sweet chocolate chips
1 tablespoons Unsalted Butter

Directions:
1. For bottom Layer: Melt unsalted butter, sugar and cocoa in top of a double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, nuts and coconut. Press firmly into an ungreased 8 by 8 inch pan.
2. For Middle Layer: Whisk pudding mix a milk for 2 minutes until pudding is nice and thick. Spread over bottom layer and refrigerate.
3. For Top Layer: Melt chocolate and unsalted butter over low heat. Cool. Once cool, pour over middle layer and chill.

The best recipe for pizza crust.

Pizza Crust - Gluten Free

Ingredients
1 Tbsp. Yeast, Active Dry
2/3 cup Gluten Free Garbanzo and Fava Flour (I use brown rice flour)
1/2 cup Tapioca Flour
2 Tbsp. Milk Powder (Non-Fat Dry)
2 tsp. Xanthan Gum (or guar gum)
1/2 tsp. Salt
1 tsp. Gelatin powder, unflavored
1 tsp. Italian Herb Seasoning
2/3 cup Warm Water
1/2 tsp. Sugar
1 tsp. Olive Oil
1 tsp. Apple Cider Vinegar
Cooking Spray
Directions
Preheat oven to 425�F.

In medium mixer bowl blend the yeast, flours, dry milk powder, xanthan gum, salt, gelatin powder, and Italian herb seasoning on low speed using regular beaters. Add warm water, sugar, olive oil and vinegar. Beat on high for 3 minutes. Add water if the dough is too stiff. The dough will resemble soft bread dough. Put mixture into 12 inch pizza pan that has been coated with cooking spray. Sprinkle extra four onto the dough, then press the dough into the pan. Bake the crust for 10 minutes. Remove from oven, top with your favorite sauce and toppings. Bake for another 20-25 minutes.

*If dough becomes too sticky, use oil or water on your hands to help work the dough.

Gluten Free Play Dough

Homemade play dough for those who are staying away from gluten- homemade dough is so much softer than store bought. It doesn't crumble and get hard. And smells much better.

Ingredients:
1/2 cup rice flour
1/2 cup corn starch or arrowroot starch *if corn-free living.
1/2 cup salt
2 tsp cream of tarter
1 cup water
1 tsp cooking oil
Food coloring, if desired
Also any sort of essential oil that you like or maybe some peppermint, almond,lemon,etc. extract or a aroma you like.
Preparation:
Mix ingredients. Cook and stir on low heat for 3 minutes or until mixture forms a ball. Cool completely before storing in a sealable plastic bag.
