5 minute Zucchini bread(No Grains, No Added Sugar)

http://www.primallyinspired.com
Recipe is very forgiving - One of those you can experiment with!

hw: interesting the recipe will work without the dates. If you want a truly sugar free quick bread do not add the dates or any fruit. Of course the dates add that sweetness ;)
This is made in a blender (I have an inexpensive blender  ,not a high speed blender -yet- so I add the eggs first (oil, zuc, dates- blend) then the remaining leaving the coconut flour at the very last because it gets to thick for my blender. I usually can only add about half the coconut flour and then I use a spoon to hand mix right in the blender.

  • 1 medium zucchini (about 3 cups -recipe is forgiving more or less is okay) , for really seedy zucchinis cut in half and seeds scraped out with a spoon then cut into chunks (hw: author says you must scrape the seeds or the bread is mushy)
  • 4 eggs
  • 12 pitted dates (you can also use 2 bananas or 6-8 figs or a combo of both figs and dates)
  • ¼ cup melted butter, ghee or coconut oil
  • 1 teaspoon pure vanilla extract (make sure grain free or omit)
  • ½ cup coconut flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon sea salt
  • optional add-in's: 1/3 cup chocolate chips, walnuts or any other nuts or seeds (hw: not chocolate chips if your looking for no sugar added)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Add zucchini chunks, dates, eggs, butter, and vanilla to a blender and blend until smooth.
  3. Add the coconut flour, cinnamon, baking soda, apple cider vinegar and sea salt and blend once again until thoroughly mixed.
  4. If you are using any add-in's. Add them now and briefly stir.
  5. Pour into a regular sized well greased (or parchment lined) loaf pan  and bake for 60 minutes. (hw: If you use a 8x8 pan cut the baking time back maybe to 40 -keep a check on)
  6. I do not use icing but this was mentioned in the orginal recipe:
A super simple chocolate icing is 1 cup chocolate chips, 1/3 cup coconut oil and 1 tablespoon vanilla extract. Melt everything in a pot. Refrigerate for 20 minutes and then whip with a mixer until it’s nice and fluffy. So good!

Chocolate Chip Banana Bars {Paleo}
KitchenAid food processorIngredients
  • 2 bananas
  • 1/2 cup almond butter
  • 1/3 cup pure maple syrup
  • 2 tsp vanilla
  • 1/2 cup coconut flour
  • 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips
  • coconut oil for pan
Instructions
  1. Place all ingredients except chocolate chips in food processor and blend on high for 1-2 minutes. Scoop out batter into bowl and add most of the chocolate chips, gently mix to evenly distribute.
  2. Press batter into 8x8 pan greased with Coconut Oil.
  3. Sprinkle remaining chocolate chips over top and bake for approximately 30 minutes at 350 degrees.
Notes from i am baker: If you are a believer that maple syrup is not Paleo, then you can substitute coconut oil.  I also used dairy, nut, and soy free chocolate, but you could use a dark chocolate instead that does not have soy lecithin or dairy in it.  Some folks let non-dairy free chocolate slide in their paleo baking… some don't.  Its just a preference! :)
You can sub with equal parts apple cider vinegar. Instead of baking powder.  And a good replacement for flour in any recipe is just to add more eggs or bananas. You can always just buy a nut of any kind and blend it in the food processor to make an almond meal or cashew meal. It is very easy. We stay away from anything processed in any way. You can also use applesauce in replace of bananas or sweet potato or pumpkin. Pumpkin would be great.

The Paleo Diet

Dr. Loren Cordain is the world’s foremost authority on the evolutionary basis of diet and disease founder of the Paleo diet. The Paleo diet is for health foremost and then weight loss.
The Paleo Diet, the world’s healthiest diet, is based upon the fundamental concept that the optimal diet is the one to which we are genetically adapted. The therapeutic effect of The Paleo Diet is supported by both randomized controlled human trials and real-life success stories.

WHEN YOU ADOPT THE PALEO DIET YOU MAY:

  • Reduce your risk of heart disease, type 2 diabetes, and most chronic degenerative diseases that affect people in the western world
  • Lose weight if you are overweight
  • Improve your athletic performance
  • Slow or reverse progression of an autoimmune disease
  • Improve or eliminate acne
  • Sleep better and have more energy throughout the day
  • Enjoy an increased libido
  • Improve your mental outlook and clarity
  • Enjoy a longer, healthier, more active life
Dr. Loren Cordain is the "real" Paleo. It is not just a fad diet. He has done the research and he has  proven the results time and time again. It is about health. Regaining your health with the benefit of weight loss, if you need to lose weight. It is about regaining muscle strength and energy.  Other "paleo" diets will say that processed meats like bacon and sausage are Paleo but Dr. Cordain explains why they are not. He tells  you that the natural meats they are made from have had their omega fatty acids manipulated by processors. This is not natural and not natural is not healthy.  He tells that many so called Paleo foods are not actually Paleo. Nuts are Paleo but only walnuts are omega 3 and omega 6 balanced. You need that balance to become healthy.  Nut flours are Paleo but they are also concentrated calories and omega unbalanced. White potatoes are not Paleo but sweet potatoes are but they are also calorie dense. There is a science to it all and if your read his books he explains the science. Non-Paleo foods have anti-nutrients, saponins and other harmful ingredients that penetrate your intestines and allow intestinal matter and bacteria to enter the bloodstream where wreaks havoc on the body.
He tells you that you do not have to give up all your treats  forever that you can live well on 85% Paleo. Although , you need to get healthy first. For more information go to  http://thepaleodiet.com.

I post true paleo recipes under "paleo" and paleo treats under "not everyday paleo". Although I did not learn that not everything paleo was not considered foods that you should eat on a regular everyday basis until after nov 2014 so anything in the paleo label before dec 2014 may not be 100% paleo. I will gradually be updating that label.

HOMEMADE PALEO BARBECUE SAUCE

Loren Cordain 's

Homemade Paleo Barbecue Sauce | The Paleo Diet

  • 1 small can of tomato paste
  • 1 cup natural apple juice
  • 1 tablespoon chili powder
  • 1 tablespoon hickory smoke spice
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon of cayenne pepper (add more for more kick)

DIRECTIONS

1. Add all ingredients to saucepan and simmer on medium/low heat for 30 minutes.
2. place in jar enough on meats or even sweet potatoes.

Paleo Slow Cooker Sausage, Pepper & Onions

Ingredients:
  • 1 12-16 ounce package of sausage (I used organic chicken sausage with basil & something else)
  • 1 red, green & yellow bell pepper
  • 1 large onion
  • 15 oz can diced tomatoes
  • 4-6 garlic cloves minced
  • Italian Seasoning
  • s & p
Directions: Put all this together in the bag. Then Freeze.
Write on bag: No thaw needed. Cook on LOW in slow cooker for 8 hours.

Paleo Slow Cooker Stuffed Bell Peppers

Ingredients:
  • 5 bell peppers
  • 1 lb ground italian hot sausage
  •  (hw: sausage is not real paleo, technically because the omega fatty acids profile are at the discrimination of the butcher or processor .He adds what ever fats he sees necessary for flavor which now makes a natural meat man-made. Not saying it can not ever be consumed just saying make it a treat. Can sub ground meat venison, grass fed beef for the sausage)
  • 1/2 head of cauliflower grated or food processed to make cauliflower rice
  • 1 small white onion chopped
  • 1 small can tomato paste
  • (hw: "Try" to buy tomato products in glass because the acid from the tomatoes breaks down the metal in cans and leaches it into the tomatoes. also use citric acid free/made from corn)
  • 5 cloves of garlic
  • Seasoning of Choice- I used basil, oregano, red pepper flakes & thyme.
Directions: Mix all the ingredients in a bowl (except peppers). Cut the tops off and take the seeds out of the bell peppers. Stuff those peppers with the mixture & freeze. I used a few bags and kept the peppers upright.
Write on Bag: Place peppers at the bottom of slow cooker and cook on LOW for 6-8 hours.

hw: I have also used grated or chopped zucchini or squash instead of cauliflower. Stuffed bell peppers are very forgiving.
