 5 minute Zucchini bread(No Grains, No Added Sugar)

Recipe is very forgiving - One of those you can experiment with!

hw: interesting the recipe will work without the dates. If you want a truly sugar free quick bread do not add the dates or any fruit. Of course the dates add that sweetness ;)
This is made in a blender (I have an inexpensive blender  ,not a high speed blender -yet- so I add the eggs first (oil,zuc, dates- blend) then the remaining leaving the coconut flour at the very last because it gets to thick for my blender. I usually can only add about half the coconut flour and then I use a spoon to hand mix right in the blender.



  • 1 medium zucchini (about 3 cups -recipe is forgiving more or less is okay) , for really seedy zucchinis cut in half and seeds scraped out with a spoon then cut into chunks (hw: author says you must scrape the seeds or the bread is mushy) 
  • 4 eggs
  • 12 pitted dates (you can also use 2 bananas or 6-8 figs or a combo of both figs and dates) 
  • ¼ cup melted butter, ghee or coconut oil
  • 1 teaspoon pure vanilla extract (make sure grain free or omit)
  • ½ cup coconut flour 
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon sea salt
  • optional add-in's: 1/3 cup chocolate chips, walnuts or any other nuts or seeds (hw: not chocolate chips if your looking for no sugar added) 
Instructions
  1. Preheat oven to 350 degrees F.
  2. Add zucchini chunks, dates, eggs, butter, and vanilla to a blender and blend until smooth.
  3. Add the coconut flour, cinnamon, baking soda, apple cider vinegar and sea salt and blend once again until thoroughly mixed.
  4. If you are using any add-in's. Add them now and briefly stir.
  5. Pour into a regular sized well greased (or parchment lined) loaf pan  and bake for 60 minutes. (hw: If you use a 8x8 pan cut the baking time back maybe to 40 -keep a check on)  
  6. I do not use icing but this was mentioned in the orginal recipe: 
A super simple chocolate icing is 1 cup chocolate chips, 1/3 cup coconut oil and 1 tablespoon vanilla extract. Melt everything in a pot. Refrigerate for 20 minutes and then whip with a mixer until it’s nice and fluffy. So good!
