Pineapple Curry 

From Eat like a Dinosaur-The Paleo Parents
Serves 6 (can cut in half to serve 3 large servings)

2 T coconut oil
2 lbs flank or cube steak cut into 1/2 x 2 inch strips
1 med onion chopped
1 bell pepper chopped
2 (14) cans of full fat coconut milk
1 fresh pineapple cubed or 20 ounces canned or (hw: frozen)
2 T red curry paste or dry curry to taste (hw: I started with 1/2 tsp dry curry-mild for a half recipe)
salt to taste

Put oil in pan and cook onions and bell pepper. Add meat and brown. Add remaining ingredients and reduce heat and simmer 20 minutes.
