paleo vanilla cupcakes chocolate frosting dessert recipe

Paleo Vanilla Cupcakes

  1. In a food processor, combine coconut flour, salt and baking soda
  2. Pulse in eggs, shortening, honey and vanilla
  3. Line a cupcake pan with 6 paper liners and scoop ¼ cup into each
  4. Bake at 350° for 20-24 minutes
  5. Cool for 1 hour
  6. Frost with Paleo Chocolate Frosting
  7. Serve
Makes 6 cupcakes

Paleo Chocolate Frosting

  1. In a small saucepan over very low heat, melt chocolate and coconut oil
  2. Stir in vanilla extract
  3. Place frosting in refrigerator for 15-30 minutes to thicken
  4. Remove from refrigerator and whip frosting with a hand blender until thick and fluffy
  5. Frost over Paleo Chocolate Cupcakes

  1. I found a recipe where you take a can of organic coconut milk and place in fridge overnight . Do not shake can. You scoop out the coconut and leave the water behind. Whip it into frosting and frost the cupcakes.
